Equipment

  • 9x13 baking dish

Ingredients

  • 2 ½ pounds pork country style ribs bone in
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper
  • 1 teaspoon ground mustard
  • 2 teaspoons paprika smoked paprika is great in this recipe
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon dried oregano
  • ¼ teaspoon chipotle powder or cayenne pepper
  • 2 tablespoons brown sugar
  • 2 tablespoons olive oil
  • 2 tablespoons butter melted
  • BBQ Sauce as needed
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions

  • Preheat the oven to 350°F. In a small bowl, combine all of the spices and mix until fully combined.
  • Pat the ribs dry with paper towels and rub the spice mix all over each rib, pressing into the meat to make sure it sticks really good.
  • Next, heat the oil in a large cast iron skillet over medium high heat. Add the ribs and sear them on all sides until browned.
  • Add the melted butter to the bottom of a 9x13 baking dish and transfer the ribs to the dish, cover with foil and bake for 1 hour and 30 minutes.
  • Remove the foil and check to see if the ribs are tender enough to pull away from the bone. If they are, brush with BBQ sauce and return to the oven uncovered for 30 minutes. If not, cover and continue baking for another 30 minutes (or longer if needed), then continue with the recipe.
  • Brush finished ribs with more sauce, if desired, or serve it on the side. Enjoy!

Notes

  • 2 ½ pounds of pork country style ribs usually ends up being 6 ribs. I am able to feed my family of 5, two adults, 1 tween and 2 little kids with this amount.
  • When serving adults I like to do 2-3 ribs per person.
  • Searing the ribs before baking them creates a deep, savory flavor. Recommended but can be skipped.
  • Time will vary depending on the thickness of your ribs. Start checking at 1 hour 30 minutes into the baking time.
