Cheesy Cauliflower Tots

Cheesy Cauliflower Tots make a fantastic low-carb side dish that even the kiddos will love. With just 7 simple ingredients, these delicious cauliflower tots come together quickly.

Ingredients
  

  • 2 pounds cauliflower riced
  • As Needed olive oil or any neutral tasting oil
  • 1 large egg
  • 1 ½ cups mozzarella cheese shredded
  • ½ cup parmesan cheese shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • In a large sauté pan over medium heat drizzle in 2 tablespoons of olive oil.  Add the riced cauliflower to the pan and cook (stirring occasionally) for approximately 8 minutes, or until tender and no moisture remains.
  • In a large bowl whisk the egg, salt and garlic powder together. Stir in both cheeses and then the cauliflower. Stir well to combine.
  • Scoop onto a parchment lined baking sheet. Shape each tot by gently flattening them out.
  • In a large skillet add 2 tablespoons of olive oil and begin cooking the tots. Cook each tot for 3-4 minutes on each side or until browned and crispy.
  • Add more oil as needed to cook all of the tots.  Place finished tots on a paper towel lined plate while cooking the remaining tots.  Serve with your favorite dipping sauce.  Enjoy!
