Blueberry Overnight Oats

Ingredients
  

  • ½ cup old fashioned rolled oats
  • ½ cup almond milk or any milk
  • ½ cup yogurt plain greek or any kind
  • 1-2 tablespoons chia seeds for a thicker consistency use 2 tablespoons
  • ½ teaspoon vanilla extract
  • 2 tablespoons honey
  • ¼-1/2 cup blueberries fresh or frozen
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • Combine the oats, yogurt, chia seeds, honey, milk, vanilla and blueberries in a bowl with a lid.
  • Cover and refrigerate overnight.
  • Top with more blueberries, chopped nuts or granola if desired. Enjoy!

Notes

You can use fresh or frozen blueberries for this recipe.  
If you plan on making this ahead of time, you can wait to add the blueberries until you are ready to eat the oats.
What I love about overnight oats, besides the fact they are a healthy breakfast/snack option, is that you can customize the recipe however you want.  Just keep the oats to liquid ratio equal.
You can use any liquid you want for this recipe, even water.
The yogurt you use can be flavored or plain, just keep in mind that if you are using sweetened yogurt you may not want 2 tablespoons of honey.
