Ingredients
  

  • 4 large eggs, hard boiled chopped
  • 1 large ripe avocado chopped
  • 1 to 2 tablespoons mayo or Greek Yogurt
  • 1 to 2 tablespoons fresh lime or lemon juice
  • 2 tablespoons cilantro minced
  • cup cucumber small diced
  • 1 to 2 green onions thinly sliced
  • To Taste salt
  • To Taste pepper
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • In a medium bowl combine the eggs, mayo, fresh lime juice, cilantro, cucumbers, green onions, salt and pepper. Mix to fully combine. 
  • Next, add in the avocado and mix just until combined.  Taste and adjust seasonings as needed.  Enjoy!
