Avocado Egg Salad

4 large eggs, hard boiled chopped 1 large ripe avocado chopped 1 to 2 tablespoons mayo or Greek Yogurt 1 to 2 tablespoons fresh lime or lemon juice 2 tablespoons cilantro minced ⅓ cup cucumber small diced 1 to 2 green onions thinly sliced To Taste salt To Taste pepper
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
In a medium bowl combine the eggs, mayo, fresh lime juice, cilantro, cucumbers, green onions, salt and pepper. Mix to fully combine.
Next, add in the avocado and mix just until combined. Taste and adjust seasonings as needed. Enjoy!
