Pico De Gallo

Pico de Gallo is one of the easiest fresh salsas you can make. It comes together in just 10 minutes and can be made in advance. The fresh flavors of tomato, onions, cilantro and jalapeño make this salsa a light and refreshing accompaniment to so many of your favorite Mexican dishes.

Pico De Gallo is my absolute favorite salsa! It reminds me of Summertime and being outside. When the tomatoes and jalapeños start coming in from the garden, I cannot wait to make Pico De Gallo. The freshness of Pico De Gallo is what makes it so good. It can be eaten by itself, on tortilla chips or on many other Mexican or Tex-Mex dishes.

I prefer making Pico with fresh heirloom tomatoes from the garden. Any tomato is fine, but heirloom tomatoes have so much more flavor than what you can get from tomatoes at the grocery store.

If you have access to a farmers' market, I highly recommend stopping by and grabbing a few tomatoes for this recipe. The fresh tomato flavor is the best part of Pico De Gallo.

However large or small you decide to cut your vegetables, be consistent with each vegetable. This will make a better salsa.

Add the onion, tomato and Jalapeño to a medium sized bowl. Mix well.

Next mix in the cilantro and seasonings.

Last add in the lime juice and mix well. Allow the salsa to sit for at least 15 minutes before tasting. When you allow the mixture to sit the flavors have time to marry. Then taste the Pico and adjust the seasonings as needed.

You can use Serrano Peppers in place of the Jalapeños.

Use fresh garlic in place of the garlic powder.

Need a salsa without spice? Grow Nadapenos. I like using Nadapenos along with the Jalapeños in salsa, because I have little kids that are eating the salsa.

Nadapenos are heatless Jalapenos. I have not seen them in the grocery store where I am, but you may be able to find them at farmers markets.

Fresh tomatoes, jalapeños, onions, cilantro and lime make up this delicious fresh slasa.  This fresh salsa is perfect for dipping, or topping on many different dishes.  Try it on tacos, enchiladas or burrito bowls.

Ingredients
  • 2 Medium onions (small diced)
  • 4 Large tomatoes (small diced)
  • 2 Large jalapenos (finely diced)
  • 2 tbsp fresh cilantro (chopped)
  • 2 pinch chipotle powder (or cayenne)
  • 1/4 tsp paprika
  • 1/4 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 1/4 tsp salt
  • 2 1/2 tbsp fresh lime juice
Instructions
  1. Add the onion, tomato and Jalapeño to a medium sized bowl. Mix well. 

  2. Next mix in the cilantro and all of the seasonings. 

  3. Last add in the lime juice and mix well. Allow the salsa to sit for at least 15 minutes then check the seasonings. When you allow the mixture to sit the flavors will be able to marry. Then taste the pico and adjust the seasonings as needed. 

Note

You can use more or less Jalapeño depending on how spicy you want the salsa to be.
