How To Make Crispy Roasted Chicken Thighs

This recipe comes together with just a few simple steps.

STEP 1

Set the chicken out on the counter 20-30 minutes before you are ready to cook it. Pat the chicken dry with paper towels.

STEP 2

Combine the softened butter, salt, pepper, paprika, garlic powder, onion powder, thyme and lemon juice.

STEP 3

Spread the butter mixture all over the chicken thighs, I like to use a pastry brush to do this, so that the butter doesn't melt or stick to my hands. Then place them on a parchment paper lined baking sheet or rack. If using a rack, make sure to place a pan underneath the chicken to catch the drippings.

STEP 4

Place in the oven and roast for 35-40 minutes or until a thermometer reads an internal temperature of 165°F - 185°F. I personally prefer my bone-in chicken to be cooked to 185°F because I feel like the texture is better. The USDA does state that bone-in chicken can be cooked to 165°F and be safe to consume.

Step 5

Garnish with fresh parsley if desired. Enjoy!

  • 1 teaspoon salt
