Full of flavor and scratch made, this Tex-Mex Dip is the perfect dip for game day, parties or just because. Everything you love about Tex-Mex in one dip. Seasoned ground beef, refried beans, a creamy cheese sauce and fresh Pico De Gallo make up this delicious dip.

This is a layered dip, scratch made refried beans being the bottom layer. You can use canned refried beans if you need to make this dip quickly. Or you can use my Refried Beans recipe to add more flavor to the dip. If you have the time, I highly recommend starting the beans the day before you make this dip. It will taste a lot better with fresh refried beans.

My absolute favorite part of this recipe is the fresh Pico De Gallo as the top layer. It brings freshness and acidity to the whole dip. Store bought salsa will work for this dip, however I would recommend grabbing fresh salsa instead of canned salsa. I like to serve additional Pico De Gallo on the side for those who love to add more to their dip. (I do!) You can find my Pico De Gallo recipe here.

If you are making refried beans from scratch start them the day before making the dip. Or early in the morning if you want to make the dip later in the day.

Cook the Meat

Begin by adding the ground beef and onions to a large skillet over medium high heat. Add in all of the seasonings for the beef. Break the meat into small pieces as it browns.

Once the meat is cooked through remove it from the pan and strain off the grease. Set it aside while you make the cheese sauce.

Make the Cheese Sauce

Add the butter to a medium sauce pot over medium heat. Once the butter is melted whisk in the flour to make a roux. Next add in the chicken stock, whisking briskly to prevent any clumps from forming.

Add in the milk and continue whisking until the milk thickens to sauce consistency. It should coat the back of a spoon. Now whisk in the shredded cheese. Continue whisking until all of the cheese has melted. Season with the cheese sauce seasonings and remove from the heat.

In a large bowl, layer the refried beans on the bottom. Next layer in the ground beef. Top with the cheese sauce, making sure to spread each layer evenly. Last, top with as much Pico de Gallo as you want. Try not to add in too much of the liquid from the salsa. Serve with tortillas chips!

I like to place a large serving spoon in the bowl to allow people to put the dip on their own plate. This will make it easier for dipping.

  • 2 1/2 cup refried beans (see recipe above or use canned)
  • 1 lb ground beef
  • 1/4 cup onion (finely diced)
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp garlic powder
  • 1 1/2 tsp paprika
  • 1 tbsp cumin
  • 1 1/4 tsp chili powder
  • 1 - 2 pinch chipotle powder (or cayenne)
  • Cheese Sauce
  • 1 1/2 cup cheddar cheese (shredded)
  • 4 tbsp butter
  • 4 tbsp flour
  • 1 cup chicken stock
  • 2 cup milk
  • 3/4 - 1 tsp salt
  • To Taste pepper
  • 1/4 tsp cumin
  • Fresh Pico De Gallo
  • 1-2 cup fresh salsa (see recipe above)
