In a cast iron skillet over medium heat add in the the olive oil and begin cooking the sausage. Crumble the sausage into small pieces as it cooks.
Once the sausage is almost cooked through, add in the peppers and onions.
Cook until the sausage is browned and the peppers and onions are tender.
Remove from the pan and set aside.
Add more oil the pan if needed to cook the potatoes.
Add the potatoes to the pan, season with salt, pepper, chipotle powder, garlic powder and paprika.
Cook, stirring occasionally, until the potatoes are browned on all sides and tender.
Add the sausage, peppers and onions back to the pan and stir well.
In a separate pan cook the eggs, however you like. I recommend over easy or sunny side up.
