Ingredients
  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 3 tablespoons granulated sugar (for topping the cookies)
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 1/2 teaspoons vanilla extract
  • 1/4-1/2 teaspoon almond extract
  • 2 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Instructions
  1. Preheat an oven to 350°F and line a baking sheet with parchment paper.

  2. In a mixing bowl, beat the softened butter and 1 cup of sugar together until light and fluffy. Mix in the egg, egg yolk, vanilla extract, and almond extract. Beat until well combined.

  3. In a separate bowl, whisk together the flour, baking soda, baking powder and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  4. Use a 1-ounce cookie scoop (or 2 heaping tablespoons) to scoop the cookie dough, then roll each piece into a ball and coat the tops in the remaining 3 tablespoons of sugar. Arrange the cookies on the prepared baking sheet, spacing them 2 inches apart. Bake for 9-10 minutes. Enjoy!

  • Use room temperature ingredients for the best texture!
  • Measure Your Flour Correctly – Too much flour can make cookies dry. Spoon and level the flour instead of scooping directly from the bag.
