Potato Pancakes

Fluffy potato pancakes are a great way to utilize leftover mashed potatoes. Delicious and hugely customizable. Don't let those leftover mashed potatoes sit in the refrigerator and go bad. Turn them into a new dish!

I am a big fan of utilizing leftovers. Afterall, I spent money on the ingredients and my time preparing them. So, I am not going to let them go into the trash. The majority of the leftovers in my home are eaten for lunches throughout the week. Sometimes I will take leftovers and turn them into a new dish. And potato pancakes are a great way to use leftover mashed potatoes. Bonus: I have recently discovered that they are great for little ones, they are not as messy as mashed potatoes. My one-year-old loves them!

Making Potato Pancakes

All you need is:

Leftover mashed potatoes

Eggs

Flour

Oil for sautéing

You just mix all of the ingredients and any additional ingredients, together. Form patties, any size you like and sauté in a pan over medium heat with a little oil. You want the pancakes to brown and firm up. You can serve them with sour cream. Or the kiddos might like ketchup to dip them in. That's how I ate them when I was little.

Customize Them

You can add so many different ingredients to your potato pancakes to ramp up the flavor, or you can choose to keep them plain. Here are some great suggestions.

Bacon

Cheese- Any kind will work. I like using parmesan.

Green Onions

Sautéed onions

Diced Ham

Chives

Broccoli

Description

Turn your leftover mashed potatoes into Potato Pancakes.  This is a basic Potato Pancake recipe that is easily customizable.    Keep the recipe like it is or add in your favorite ingredients.   If you have never had Potato Pancakes, you are in for a treat!

Ingredients
  • 1.5 cup mashed potatoes (leftovers)
  • 1 Large egg
  • 1/4 cup flour (all purpose)
  • As Needed oil
Instructions
  1. Mix together all of the ingredients, making sure to get the egg fully incorporated. 

    Preheat a skillet over medium heat.  Add in just enough oil to coat the bottom of the pan.

    Form patties out of your potato mixture, any size you like, place in the pan and sautée the for 4-6 minutes on each side.  You want them to be lightly brown and firm.   Enjoy!
