You do not need a ton of ingredients to make this One Pot Cheesy Taco Skillet. Which is one of my favorite things about this recipe, aside from be prepared in one pot. It is nice to only have to use a handful of ingredients to make a nutritious meal.

With only a handful of ingredients, you can serve up a delicious skillet meal that your family will love.

1. First sauté the ground beef and onions until the meat is fully cooked and the onions are tender. Now stir in the minced garlic and cook for another 30 seconds. Strain off the fat and return to the skillet.

2. Stir in the tomato paste and seasonings and cook for 1-2 minutes. Just until the tomato paste is fully incorporated.

3. Add in the rotel and black beans. Stir well to combine.

4. Sprinkle over the shredded cheese and pop in the oven for 3-4 minutes.

5. Garnish with green onions and cilantro and serve. Enjoy!

Ingredients
  • 1 1/2 lb ground beef
  • 1/2 Large onion (small diced)
  • 3 Cloves garlic (minced)
  • 2 tbsp tomato paste
  • 2 tsp salt
  • To Taste pepper
  • 1 Tablespoon cumin
  • 1 Tablespoon garlic powder
  • 2 tsp paprika
  • 1 Teaspoon chili powder
  • 1/4-1/2 Teaspoon chipotle powder (or cayenne powder)
  • 1 Teaspoon onion powder
  • 1/2 Teaspoon dried oregano
  • 10 oz rotel (10 oz. can)
  • 2 (14-oz.) Cans black beans (drained and rinsed)
  • 2 cup cheddar cheese (shredded)
  • As Needed green onions (for garnish)
  • As Needed cilantro (for garnish)
Instructions
  1. In a large skillet over medium heat combine the ground beef and diced onions.  Sauté until the beef is fully cooked and the onions are tender.  

  2. Add the minced garlic to the skillet and continue cooking for 30 seconds.  Remove from the heat and strain off the fat.

  3. Return the meat back to the skillet and place over medium low heat. Combine the tomato paste and all of the seasonings with the meat.  Cook just until the tomato paste is fully incorporated.  Turn the heat off.

  4. Turn the oven to broil.  Add the rotel and black beans to the skillet, stirring well to combine.

  5. Sprinkle the cheese over the mixture and place in the oven for 3-4 minutes to melt the cheese.

  6. Garnish with sliced green onions and chopped cilantro.  Enjoy!
