Ingredients
  • 2/3 cup quinoa (rinsed and drained)
  • 2 tablespoons olive oil (or any neutral tasting oil)
  • 4 cloves garlic (minced)
  • 1 1/3 cups water
  • 1/2 teaspoon salt
  • 3 tablespoons fresh parsley (minced)
  • 2 teaspoons fresh thyme (minced)
  • 2 teaspoons fresh oregano (minced)
  • 2-3 teaspoons fresh lemon juice
  • 1 lemon zested
Instructions
  1. Rinse and drain the quinoa 20 minutes before cooking. 

  2. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Stir in the rinsed and drained quinoa, toasting it for 1-2 minutes.

  3. Add in the water and salt, then bring the mixture to a boil. Cover, reduce the heat to low, and let it simmer for 15 minutes.

  4. Once cooked, remove the pan from heat and let it sit, covered, for 10 minutes. This helps the quinoa absorb any remaining moisture.

  5. Remove the lid, fluff the quinoa with a fork, and stir in the fresh herbs, lemon zest, and lemon juice. Enjoy!
