They gobbled it up and immediately proclaimed (my 10 and 5 year old) that it was the best chicken dish they had ever had. No complaints here, because it is so easy to make and is ready in just 30 minutes, you cannot beat that. Oh, and they are right, it is so dang delicious!

Try substituting the chicken breasts in this recipe for boneless skinless chicken thighs. Or you could even cut the chicken breasts into tenders for delicious lemony chicken tenders.
Customize this dish with your favorite veggies by adding them to the pan after cooking the chicken. Quick cooking vegetables or blanched vegetables will work best. Fresh zucchini, squash, green beans or mushrooms would be fantastic with this dish.

Combine 1 teaspoon of salt, 1/2 teaspoon of pepper and 1/2 teaspoon of italian seasoning. Cut the chicken in half lengthwise and lightly beat out until even thickness is achieved. Pat dry and season with the seasoning mixture.
In a small bowl combine the eggs and water. Whisk to fully combine. Set aside. In a separate bowl combine the panko breadcrumbs, shredded parmesan cheese, flour, garlic powder, remaining pepper and italian seasoning. Whisking to fully combine.
Begin breading the chicken by first coating the chicken with the eggwash, letting the excess drip off, then pressing gently into the breadcrumb mixture. Make sure each side gets a generous amount of breading. Continue with all pieces of chicken.
In a large skillet, heat oil (enough to cover the bottom of the skillet) over medium heat. Cook each piece of chicken until lightly browned, crispy and the internal temperature reaches 165°F.
In a separate pan melt the butter for the sauce. Once melted add in the minced garlic and sauté until fragrant. Whisk in the lemon juice and chicken stock. Cook for 2 minutes over medium heat. Pour over chicken, garnish with parsley and serve. Enjoy!
