Being able to stock my freezer with healthy, made from scratch foods, like these breakfast burritos, makes me feel good knowing my kiddos get to start their day off with food that I made. And know what is in it. No preservatives, no added sugar, just simple ingredients that I regularly keep stocked in my kitchen.
I love these breakfast burritos for the simple fact that they are packed full of protein, and super easy to make. I make a big batch, freeze them and they are ready to go whenever I need them. I simply pull them out the night before and let them thaw overnight in the refrigerator. 45 seconds to 1 minute in the microwave and they are ready to be enjoyed. We like to add our favorite hot sauce or salsa to these when we are eating them!

Breakfast Sausage - Loose sausage works best since it is crumbled while cooked. This makes it easier to mix with the remaining ingredients.
Potatoes - Russets are what I typically keep in my pantry. Any other kind of potato will work, just keep in mind the cooking time in this recipe is for russet potatoes.
Seasonings - I lightly season the potatoes with salt, pepper and a little paprika. The eggs also get a little salt and pepper.

Cheese - Cheddar cheese is what I prefer to use. Use your favorite melty cheese like colby or monterey jack!
Tortillas - For this recipe I used medium tortillas. These are the perfect size for my young children. You may prefer to use large tortillas. Just double the other ingredients to fill the larger tortillas.
The easiest way to reheat a freezer breakfast burrito is to take it out of the freezer the night before and allow it to thaw overnight in the refrigerator. Roll up in a paper towel and heat in the microwave 30-45 seconds. Test and continue reheating if needed.
If reheating from frozen, I recommend using the defrost setting first.

Preheat an oven to 375° F and line a sheet tray with parchment paper. Peel and cut your potatoes into 1/4" cubes.
Place the potatoes on the prepared pan and toss with oil and seasonings. Place in the oven and cook for 25 minutes.
While the potatoes are cooking begin browning the sausage in a skillet. Crumbling it as it cooks. When done remove from the pan and strain off excess fat on a paper towel lined plate. Set aside until needed.
Mix the eggs together with a little milk or heavy cream if desired. Season with salt and pepper, if desired and scramble like you normally would. Remove from the pan and add to a bowl.
Add the sausage and cooked potatoes to the bowl. Mix well, taste and adjust seasonings if needed. Allow to cool before assembling the burritos.
Lay out the tortillas and divide the mixture between them, placing the mixture in the middle of each tortilla. Fold in the sides then roll them up.
When completely cooled, individually wrap the burritos with plastic wrap then place in a freezer bag or container. Freeze until needed. Enjoy!
