Dipped Peanut Butter Crackers

This delicious treat is super easy to make. Ritz Crackers stuffed with peanut butter and dipped in a vanilla candy coating. They are so good, and very addictive. This recipe is a perfect quick treat to make for any holiday. No baking required! With Easter right around the corner I thought making these with some Easter sprinkles would be really cute. These really are a fuss free treat that you can whip together quickly anytime.

I first had these MANY years ago when my mother-in-law made them. I had never heard of them but was instantly hooked. I have been making them for years now, and love how easy they are to make. My husband asks for them all of the time. He likes A LOT of peanut butter on the crackers, I prefer a thin layer. So, whenever you make these you can adjust the amount of peanut butter to your liking.

What you need

  • Ritz crackers
  • creamy peanut butter
  • almond bark, or white chocolate
  • sprinkles

These crackers can be made with almond bark, white chocolate or milk chocolate. You can also use different toppings to add decoration or additional flavors. During Christmas we like to add crushed candy canes to the top of them. Those are my favorite. You don't need any toppings though; they are delicious without them.

How to make Dipped Peanut butter crackers

Line a sheet tray with parchment or wax paper. Spread a layer of peanut butter on half of the crackers and top with the other half of the crackers to sandwich them together.

Now melt your almond bark, following the directions on the package to ensure you do not burn the almond bark. Use a tall container to melt your almond bark in rather than a wide one. This helps make the dipping easier.

Using a fork, drop one cracker in the melted almond bark and gently press it down until it is covered with the almond bark. Then gently remove the cracker, tapping the fork against the side of your container to allow some of the excess almond bark to drip off.

Place on the baking sheet and continue with the rest of the crackers. I like to make about 6 crackers, then top with the sprinkles, or other toppings. This way the almond bark doesn't dry before I get done.

Dipped Peanut Butter Crackers

Allow to set on the parchment paper to dry. This takes a whopping 10 minutes. Enjoy!

How to store the crackers

These can be stored in an airtight container on the counter for a few days. You can also store them in the refrigerator or freezer.
