I LOVE cookies, and any chance I get to turn my favorite cookie recipe into cookie bars I take it. These Cowboy Cookie Bars start with the best, thick and chewy blondie bars base, ever, then are LOADED with your classic cowboy cookie ingredients. What's not to love about that combination?

Not only is this cookie bar recipe fantastic, but it is super easy to make. Since the butter is melted and doesn't need to be creamed with the sugar, you don't need a mixer to make this recipe. Just a bowl and a spoon and about 10 minutes of prep and you are on your way to enjoying these delicious Cowboy Cookie Bars.

How Many Servings Does This Recipe Make?

For large cookie bars cut into 9 equal pieces. For smaller cookie bars cut into 16 equal pieces.

These cookie bars are so simple and easy to make, even the kids can help make them!

STEP 1

Combine the flour, baking powder and salt in a bowl. Whisk together until fully combined. Then stir in the oats, shredded coconut, chocolate chips and chopped pecans. Set aside.

STEP 2

In a separate bowl whisk together the melted butter, brown sugar, vanilla extract and eggs.

STEP 3

Now stir the dry ingredients into the wet ingredients until just combined.

STEP 4

Gently pour the batter into the prepared baking dish, spreading out into an even layer.

STEP 5

Bake for 30-35 minutes or until a toothpick inserted in the middle comes out clean. Cool completely before cutting. Enjoy!

Cinnamon - In Laura Bush's famous Cowboy Cookie recipe she uses cinnamon. A pinch or two of cinnamon adds additional flavor to these delicious cookie bars.

Walnuts - I have made these cookies with walnuts and they turned out wonderful!

Pretzels - While not traditional to Cowboy Cookies, pretzels and cookie dough work really well together.

Chocolate - This recipe calls for semi-sweet chocolate chips but feel free to change it up a bit by using milk chocolate, dark chocolate or even m&ms.

Ingredients
  • 1/2 cup unsalted butter (melted)
  • 1 cup light brown sugar
  • 2 large eggs (at room temperature)
  • 2 teaspoons vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup old-fashioned oats
  • 1/2 cup coconut (unsweetened or sweetened)
  • 1/2 cup chocolate chips (semi-sweet)
  • 2/3 cup pecans (chopped)
