Everyone loves a simple, sprinkle cookie. I know I love making them! Red, green and white sprinkles look so pretty inside and on top of these delicious, chewy cookies. The sprinkles I used for these cookies is actually a mixture of three different types of sprinkles. I love mixing sprinkle mixes to create the perfect mix.
I have used my favorite cookie dough for this recipe. This all-purpose cookie dough is perfect by itself or work great for all types of add-ins. I use it for my White Chocolate Peppermint Cookies recipe as well as my Christmas Sandwich Cookies recipe.
1.Dry ingredients: In a medium bowl mix together the flour, cornstarch, baking soda, salt and 2 tablespoons of sprinkles.
3. Incorporate wet ingredients: Mix in the egg and vanilla extract. Scraping the bowl as need. Mix until fully combined.
4. Incorporate dry ingredients: Slowly add the dry ingredients to the wet ingredients, mixing just until combined.
5. Scoop: Line a baking sheet with parchment paper and scoop out the cookie dough using a 1.5-ounce portion scoop. Use two scoops per cookie. Place 2" apart on lined baking sheet. Lightly press down to flatten.
6. Decorate: Sprinkle the remaining sprinkles over the tops of the cookies.
7. Chill: Place in the refrigerator and chill the cookie dough for 1 hour.
8. Bake: Preheat an oven to 350° F and bake the cookies for 14 minutes. Cool completely on cooling rack. Enjoy!

In the bowl of a mixer cream together the butter and both sugars. Mix until creamy and lighter in color. This should take about 2 minutes.
To the mixer, add in the egg and vanilla extract. Scraping the bowl as need. Mix until fully combined.
Slowly add the dry ingredients to the wet ingredients, mixing just until combined. Line 2 baking sheets with parchment paper.
Scoop out the cookie dough using a 1.5-ounce portion scoop. Use two scoops per cookie. Place 2" apart on lined baking sheet. Lightly press down to flatten. Sprinkle with the remaining sprinkles. More if you like!
