Description

Quick Chocolate Chip Cookie Bars loaded with toasted pecans.  These bars really do have the perfect chewy texture.  

Ingredients
  • 6 oz butter (softened)
  • 1.5 cup light brown sugar (lightly packed)
  • 2 Large eggs
  • 1 tbsp dark corn syrup
  • 2 tsp vanilla extract
  • 2 cup all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 cup semi-sweet chocolate chips
  • 1 cup pecans (toasted and chopped)
Instructions
  1. Preheat your oven to 350°F.  Grease and line a 9"x13" baking dish.

    In a mixing bowl cream together the butter and sugar until the butter is lighter in color and fluffy.  About 6 minutes.

    Add in the eggs, one at a time, making sure each egg is fully incorporated.  Add in the corn syrup, making sure to scrap down the sides of the bowl as needed. 

    Next mix in the vanilla, baking powder, baking soda, and salt.  Mix well.

    In a separate bowl, mix together the flour, pecans and chocolate chips.  Carefully add to the butter mixture.  Mix just until the flour is fully incorporated.  

    Spread into the prepared baking dish and bake for 30-35 minutes.  The middle will still be a little gooey, but it will continue to cook after it has been pulled out of the oven. Allow to cool 45 minutes before cutting.  Enjoy!
