Blueberry Overnight Oats

Quick and easy Blueberry Overnight Oats. Overnight Oats are a great healthy option for breakfast or even a snack. This recipe is similar in flavor to a blueberry muffin, just without the gluten, or tons of sugar.

This is my oldest sons favorite Overnight Oats recipe. This recipe works well with fresh or frozen blueberries. Don't have blueberries? Use any berry or fruit you have. That is the beauty of Overnight Oats. You can create any flavor you want. And feel good about eating it! I know I do!

What You Need to Make Blueberry Overnight Oats

Old Fashioned Oats- I find that Old Fashioned Oats have a better texture in this recipe. You can use steel cut or instant, but the texture will be different.

Yogurt- ANY kind of yogurt can be used when making Overnight Oats. Just keep in mind the sweetness and flavor of the yogurt will affect the entire dish.

Almond Milk- or any milk, even water will work.

Vanilla Extract- adds flavor, makes the overnight oats taste more like blueberry muffins than if you leave it out.

Chia Seeds-offer nutrients like fiber and Omega 3s. They also help to thicken the Overnight Oats.

Honey- for sweetness, unless you are using a sweet yogurt. You may need to adjust the sweetness.

Description

This recipe comes together super-fast, making it an easy breakfast or snack option to prepare in advance.  Top it with granola, other fresh berries, like strawberries or raspberries, almonds or just blueberries.  You cannot go wrong with this recipe!

Ingredients
  • 1/2 cup rolled oats
  • 1/2 cup almond milk
  • 1/2 cup yogurt
  • 2 tbsp chia seeds
  • 1/2 tsp vanilla extract
  • 2 tbsp honey
  • 1/4-1/2 cup blueberries
Instructions
  1. In a small container, mix together the oats, almond milk, yogurt, chia seeds, honey and vanilla extract.

    You can mix the blueberries in now or top with the blueberries when you go to eat the oats.

    Put a lid on the container and refrigerate overnight.

Note

You can use fresh or frozen blueberries for this recipe.  

If you plan on making this ahead of time, you can wait to add the blueberries until you are ready to eat the oats.

What I love about overnight oats, besides the fact they are a healthy breakfast/snack option, is that you can customize the recipe however you want.  Just keep the oats to liquid ratio equal.

You can use any liquid you want for this recipe, even water.

The yogurt you use can be flavored or plain, just keep in mind that if you are using sweetened yogurt you may not want 2 tablespoons of honey.
