Banana Nut Overnight Oats

These Banana Nut Overnight Oats are my go-to overnight oats recipe. Packed full of cinnamon, toasted pecans and bananas, what's not to love about that combination? I love making overnight oats for a quick and nutritious breakfast or snack.

Overnight oats are easily customizable and extremely easy to make. My oldest son loves helping me come up with flavors options. He tends to try to add chocolate to all of them. I use a basic overnight oats recipe and add in different fruits, nuts or nut butters. I have shared a post about my basic recipe and a few flavor combinations that are popular in my house. Overnight Oats are great eaten cold or warmed up.

How long do they last?

You can keep Overnight Oats in the refrigerator for about 4 days.

Do Overnight Oats have to be made the night before?

Yes, and no. You have to give the oats time to soak up the moisture from the milk and yogurt to soften them. That is why they are typically made the night before so that they are ready for breakfast in the morning. You can make them in the morning and check on the texture of the oats after about 6 hours.

Description

Banana with toasted pecans and cinnamon, what's not to like about that combination!  Quick and easy to make, overnight oats are a great nutritious breakfast that come together in just a few minutes.

Ingredients
  • 1/2 cup rolled oats
  • 1/2 cup greek yogurt (plain or vanilla are great for this recipe)
  • 1/2 cup almond milk (or any milk)
  • 2 tbsp chia seeds
  • 1 tsp cinnamon
  • 2 tbsp toasted pecans (chopped)
  • 1/2 Large banana (sliced)
  • 1-2 tbsp honey (depending on how sweet your yogurt is, you may just need 1 tablespoon)
Instructions
  1. In a small container, mix together the oats, almond milk (or your milk of choice) yogurt, chia seeds, honey and cinnamon.

    Cover with a lid and refrigerate overnight.

    When you are ready to eat the overnight oats, mix in the pecans and banana slices.  Enjoy!

Note

Tips:     Because of oxidation, don't add the banana until you are ready to eat the overnight oats.  Brown bananas are just not appealing.

I also don't add the pecans until I am ready to eat the overnight oats to keep the nuts texture.

How long are overnight oats good for in the refrigerator?

   I find that they are good for about 3 days in the refrigerator.
