My family loves these breakfast potatoes, and I love making them. Now don't get me wrong, this Southern Woman loves fried potatoes in bacon grease on the stove in a well-seasoned cast iron pan. Sometimes, I just want to throw the ingredients in the air fryer and walk away. With this recipe it is just as simple as that, season, toss, Air Fry and done!
Air Fryer Breakfast Potatoes are not just a breakfast side dish, they are perfect for quick lunches and dinners. They pair perfectly with Smothered Chicken and Meatballs and Gravy. I probably serve these breakfast potatoes for dinner more than I do for breakfast. Either way, they are delicious and easy to make.
As soon as summer hits, I look forward to swapping my oven for the Air Fryer. The last thing I want do first thing in the morning is heat up the kitchen by using the oven. Which is why I love making these breakfast potatoes in the Air Fryer.
Using the Air Fryer not only helps keep the kitchen cooler, which I am totally down for it also cuts down on the cooking time. Which is a bonus in my book!

When it comes to seasoning these potatoes, I stick to just oil, salt and pepper. This simple seasoning pairs perfectly with some fried eggs and bacon. Sometimes I will add some chipotle pepper powder, paprika and garlic powder to the potatoes, or toss them with some fresh herbs after they are finished cooking.
A lot of Air Fryer recipes call to preheat the Air Fryer for 10 minutes before adding the food to it, but I really don't find that to be a necessary step with my Air Fryer. With that being said, if you feel like you get better results from preheating your Air Fryer start with that step.
For this recipe I used Russet Potatoes. I have also used red and yukon gold potatoes and they both work just fine for this recipe; they just take a little less time to cook.
STEP 1
Wash the potatoes and peel, or don't peel them. Your choice. Pat dry and cut into 1/2" pieces. Large pieces will take longer to cook.
STEP 2
Place the cut potatoes in a large bowl, drizzle over the oil and season with salt and pepper. Toss to evenly coat the potatoes.
STEP 3
Place the potatoes in a single layer in the Air Fryer baskets. If too crowded the potatoes will cook properly.
STEP 4
Return the baskets to the Air Fryer and set to 350° F. Air Fry for 25 minutes, stopping to gently toss halfway through the cooking time.
STEP 5
After 25 minutes the potatoes should be lightly browned, crispy and fork tender when pierced. Enjoy!
That is totally up to you. I prefer to leave the potatoes unpeeled to make the whole process quick and easy. With that being said, peeling or not peeling will not affect the cook time of the potatoes, it is up to your personal preference.

Absolutely not! There is no need to soak the potatoes before Air Frying them. The potatoes will get nice and crispy without soaking them first.
Store leftover breakfast potatoes in an airtight container in the refrigerator for up to 5 days.

Wash and pat dry your potatoes. Then cut them into 1/2" pieces. It is important to keep them relatively the same size to promote even cooking.
Add the potatoes to a large bowl. Drizzle over the olive oil then sprinkle the salt and pepper over the potatoes.
Toss the potatoes in the bowl to evenly coat them with the oil and seasonings. Place in an even layer of the Air Fryer baskets.
Air Fry at 375°F for 25 minutes. Pause and gently toss the potatoes halfway through the cooking time.
The potatoes are done when they are crispy on the outside and nice and soft on the inside. They should be fork tender. Add additional time if needed. Enjoy!
